This apple and honey cake was a dessert for a holiday dinner with my family. My family likes to eat pretty healthy so I usually don’t have to worry when going home for family dinner. However, when my Mom is also hosting other guests besides our family for the holidays, she likes to make sure she has something for everyone. So I learned from her and now I always bring a dessert to parties. It’s my favorite part of the meal and I want to make sure there is something for me to eat (hence, something for everyone!)

I have been told that I am equal parts my mom and my dad, so this post is an ode to them. I learned from my dad how to think ahead so when I started to notice that I would come home from dinner parties with a stomach ache or starving because I didn’t eat anything, I started to think ahead before going.

Some little pointers I like to give are; eat something small that is nutrient dense before you leave so you’re not ravenous when you get there. Ask the host what they are making so you can be excited for the menu and not have to stress about what you’re going to eat. Lastly, bring your own homemade dessert! Not only is it amazing that you get to enjoy dessert with everyone else, but also you just might get them to see that the healthy option actually tastes amazing too! Maybe everyone will even favor the healthy dessert over the other options (tear tear for the store bought desserts).

This cake is sweetened only with honey, which gives it it’s delicious taste but also its immune boosting benefits. Sugar is sugar when it breaks down in the body but natural sugar like honey is still useful in some of our diets for vitamins and natural remedying qualities. When eating natural sugar its important to keep your blood sugar levels balanced by eating sugar with healthy fats and fibers to promote a slower breakdown in the body. Compared to when we eat processed sugars, which break down immediately and go straight into the bloodstream. Honey has so many health benefits, especially if it is local to where you live. When it is mixed into a recipe with ingredients like almond flour and collagen, its a win win!

  1. Preheat oven to 325*F. Grease loaf pan with coconut oil or use parchment paper. If using parchment paper, spread a small amount of coconut oil on the bottom of paper so it sticks to the loaf pan.
  2. Peel skin completely off of both apples with peeler and dice into small cubes.
  3. Whisk together wet ingredients (eggs, coconut oil, honey)
  4. Add dry ingredients into wet (almond flour, coconut flour, baking soda, salt, and cinnamon). Whisk together until smooth.
  5. Fold diced apples and nuts into batter with spatula.
  6. Pour into loaf pan and drop and release loaf pan on counter to release any air pockets or bubbles.
  7. Add pecans to the top for decoration! (this step is optional - you can also use any other nut)
  8. Bake for 30-45 mins (depending on power of oven) until golden brown on top. Stick with cake tester or large toothpick in center of cake and make sure it comes out clean with no wetness.
  9. Let cake sit for 20-30 minutes to cool down before cutting.
