Mix all of your breakfast ingredients into a baking dish and you have yourself these blueberry pecan baked oatmeal bars. I used to be such a sweet breakfast person. Breakfast is my favorite meal of the day and even when I would have eggs, which you think would be salty, I would drizzle them with maple syrup (sounds weird, I know, but don’t knock it till you try it).


Sometimes a sweet breakfast is all I want in the morning. Whether it’s a late wake up on the weekend or it’s almost that time of the month, when I crave something carby and sweet I don’t want to feel guilty about it. However, something like a croissant or a muffin is usually filled with lots of sugar and gluten, and always leaves me feeling terrible before noon even hits. I can say from experience, morning bloat is the worst and can ruin your entire day.



So when I was making these baked oatmeal bars, the idea was to have something filling, comforting and nutritious with little to no sugar. I went ahead and added NO sugar to these. Just one banana and some blueberries and theyr’e just sweet enough that they ease the craving but probably won’t trigger the body to crave sugar for every meal for the rest of the day.

One thing I always try to be consistent with with my recipes is keeping it simple and easy. My favorite recipes are ones that use only one bowl and just a few utensils, and this recipe falls under that category. One bowl, a few measuring cups, a whisk and a spoon. Easy preparation, easy clean up.



In the ingredient list below, you’ll see that I emphasized organic for the fresh blueberries and there’s a reason for that. I don’t necessarily think that every fruit and vegetable you consume has to be organic, because let’s be real, that’s not always budget friendly. However, there are certain ones that should always be a priority. For now, enjoy making these easy and simple blueberry pecan baked oatmeal bars and if you are feeling super extra, you can cut your squares into super large pieces and put one in a bowl with (nut) milk. Spoon each bite of the baked oatmeal meal bars with a little bit of a milk and you’ll want to make this recipe every freakin day. 🙂

blueberry pecan baked oatmeal bars
  1. Preheat oven to 350*. Grease 8x8 baking dish or line with parchment paper.
  2. In a large bowl, whisk wet ingredients. Eggs, banana, almond butter, and vanilla extract. If the banana is not ripe enough you can soften it in the microwave.
  3. Once wet ingredients are well mixed, add dry ingredients. Collagen peptides are optional. Mix with a spoon.
  4. Gently fold in blueberries.
  5. Pour batter into baking dish and with the back of the spoon, flatten out batter so it is even throughout the whole dish. Make sure there are no holes.
  6. Place pecans on top and press down slightly so they are in the dough.
  7. Bake for 15-25 minutes. Poke with cake tester until it comes out clean. Be careful not to overcook.
  8. Store in fridge for 4-5 days.
