If you’re reading this, it’s not too late. I hope you’re ready to change the way your mind has been trained to think by the food and diet industry alike. Some people think that it’s “wrong” to eat chocolate for breakfast but in my book, it’s totally ok, which is why these chocolate dipped macaroons are the best thing to hit the on-the-go breakfast market since energy balls.

Coconut is a healthy fat and is considered a superfood. There are so many benefits to coconut including it’s nutrient density. It is high in fat, fiber, iron, and so many other vitamins and minerals. It is filling and takes time to digest so it keeps you full for longer. Macaroons are usually seen as dessert because they are loaded with sugar but when you take the sugar out of them, they’re actually a perfect breakfast cookie, snack or dessert.

 

 

This macaroon recipe is super easy and you don’t need any fancy kitchen tools to make it. However, you do have to love coconut. They’re straight up coconut flavored. They are perfect for grabbing on the go, or if you’re like me, sitting down and eating with your coffee. Ingredients

Unsweetened Shredded Coconut 

Egg Whites

Coconut Flour

Nut Milk

Vanilla Extract

Honey (optional)

Collagen Peptides (optional)

Instructions
  1. Preheat oven to 300*F.
  2. In a small bowl, beat egg whites.
  3. In a large bowl, mix all ingredients together until well combined. Option to place dough in fridge to cool and solidify. Will make rolling easier.
  4. Roll into balls and cook for 15-20 min until lightly browned and firm.
  5. Melt one eating evolved siganture dark bar on stovetop and pour into bowl. Dip macaroons half way or completely coat in chocolate and place on plate/tray.
  6. Refrigerate chocolate dipped macaroons until chocolate has hardened. Can store in fridge or on countertop.
