A fun take on a classic recipe and highly loved food, hummus. Mediterranean is one of my favorite cuisines and hummus has always been a love of mine. I love hummus for a handful of reasons, but one of the biggest reasons is because in my opinion, hummus is a life saver when it comes to eating vegetarian/vegan. Beans have a good amount of protein and fiber, and are great for plant based diets to ensure you’re getting enough of your nutrients.
As I continue to experiment with foods that make me feel well and ones that don’t, I’ve started to think about ways to modify classic favorites with different ingredients. That’s how I came up with butter bean hummus!
If you’re already thinking “What are butter beans? I’ve never heard of them”, don’t worry, I got you. I wasn’t sure what a butter bean was at first either. Butter beans are actually the same thing as lima beans (which I also love). They can be eaten in two different forms. One is when they are young and more green (our classic thought of a lima bean) and the other is their mature form which is a white-ish color (aka butter beans). Both are delicious, nutritious, and very versatile.
This recipe is perfect for your weekly meal prep, to make a big batch if you’re entertaining, or to make whenever you’re craving it because it’s that simple and easy!
